Mocha Chip Cheesecake Bars

This is a SUPER YUMMY recipe. Sorry but i don't have pictures to show you simply because i made this last year :-) the recipe was given to me by a friend.....

Ingredients

CRUST:
8 tablespoons (1 stick) margarine or butter, softened
1/2 cup firmly packed brown sugar
1-1/4 cups quick or old fashioned, uncooked
1 cup all-purpose flour

FILLING:

3 packages (8 oz. each) regular or reduced-fat cream cheese, softened
3/4 cup granulated sugar
2 tablespoons instant coffee granules or espresso powder
1 tablespoon baking cocoa
1 teaspoon vanilla
3 eggs
1 cup semi-sweet chocolate chips, divided

PROCEDURE:

Heat oven to 350°F.
For crust, beat margarine and brown sugar in medium bowl until creamy. Add oats and flour; mix well. Press dough evenly onto bottom of ungreased 13 x 9-inch baking pan. Bake 15 minutes. Cool on wire rack.
For filling, beat cream cheese, granulated sugar, coffee granules, cocoa and vanilla in large bowl on medium speed of electric mixer until smooth. Add eggs; beat just until well blended. Stir in 3/4 cup chocolate chips. Pour filling evenly over crust. Sprinkle with remaining 1/4 cup chocolate chips.
Bake 30 to 35 minutes or until center is set. Cool completely in pan on wire rack. Cut into bars. Store tightly covered in refrigerator.

1 cup all purpose flour = 1cup plus 2T cake flour
1 cup sifted cake flour = 1cup minus 2T sifted all-purpose flour
1tbsp cornstarch = 2tbsp all purpose flour
1c white sugar = 1 1/3c brown sugar
1oz unsweetened chocolate = 3tbsp cocoa powder + 1T fat
1c whole milk = 1/2c evaporated milk+1/2c water
1cup sour cream = 1 cup yogurt(plain)
1T fresh herbs = 1t dried herbs
1c sour milk = 1T vinegar or lemon juice + 15T milk
1c corn syrup = 1c sugar + 1/4c water

Cupcake Addicts

I found this website specially made for CUPCAKE ADDICTS like me. I haven't tasted any of their recipe but will do... SOON.. when i have a free time to bake for my prince.

It has a lot of YUMMY(i think) recipes to choose from and tips on how to achieve the same look from that recipe. Nice diba???

It's not even hard to find a cupcake for you.. Why??? Because it has a wide range of categories. from general, main ingredients, seeds, techniques to themed cupcakes.

Looking at the cupcakes makes me want to go to the nearest grocery and buy the ingredients :-)
